  • 8 oz pre-sliced mozzarella cheese log About 16 slices
  • 16 leaves fresh basil leaves One per bite, plus a few extra
  • 4 pcs black olives For making heads
  • balsamic glaze For flavor and 'spots'
  • crackers Optional, for serving under bites

Preparation

  • Clear a large cutting board and set out a small bowl for olive pieces and a squeeze bottle of balsamic glaze.
  • Lay out the mozzarella slices on a tray in a single layer.

Halve the cherry tomatoes

  • Slice each cherry tomato in half lengthwise. Place cut-side down on the board.

Form the wings

  • Make a shallow slit down the curved side of each tomato half to separate the two sides slightly.

Prepare the olive heads

  • Cut the black olives lengthwise and then into four small head pieces.

Glaze the mozzarella

  • Drizzle a little balsamic glaze across each mozzarella slice.

Add basil

  • Place one basil leaf on each glazed mozzarella and press gently.

Assemble the ladybugs

  • Set a tomato half, cut-side down, on each basil-topped mozzarella with the slit on top.
  • Place an olive piece at the front of each tomato to create the ladybug head.

Add the spots

  • Dot tiny spots on the tomato backs with balsamic glaze.

Optional cracker base and plating

  • Arrange each assembled bite on a cracker or place them directly on a board.

Final touch and chill

  • Sprinkle a pinch of flaky sea salt and cracked pepper if desired and cover lightly.

Notes

Make-ahead tips: Pre-slice tomatoes and olives a day before. Assemble the bites within two hours of serving for best texture.
