Preparation

  • Wash and dry the cucumber, then slice into even 1/4-inch rounds. Pat slices dry with paper towels so the filling sticks.
  • Leave the 8 oz block of cream cheese at room temperature for 20–30 minutes, or microwave 8–10 seconds if in a hurry—don’t melt it.
  • In a medium bowl, beat the softened cream cheese with the dill, dill pickle juice, onion powder, garlic powder, pepper, and chopped green onion until smooth. A hand mixer or fork both work.
  • Spoon the mixture into a pastry bag or a Ziploc bag. Squeeze the cream cheese down to one corner and snip a small hole.
  • Pipe a small dollop onto each cucumber round—aim for consistent size, but don’t worry about perfection.
  • Top with a tiny sprig of parsley, a chive piece, or a caper if you like.
  • Serve immediately, or cover and chill for up to 4 hours. If piping more than 4 hours ahead, store filling and cucumber slices separately to keep cucumber crisp.
